Wild Hing, also known as asafetida, is the dried sap of a mountain shrub, and its flavor is incomparable and essential to many South Indian dishes. The aroma is sharp when raw, but after blooming in a little bit of oil at the beginning of the cooking process, it adds a deep, savory, allium flavor.
It is a perfect addition for those on a Low FODMAP Diet, or anyone sensitive to garlic and onion, as it is reminiscent of herbs in allium family. As it is powerful, a little goes a long way as this little jar is going to last you for quite a while.
