Fenugreek seeds, also known as methi, is commonly used in the preparation of mango chutney and pickles, for a tangy aroma. Roasting fenugreek helps to decrease bitterness and enhance the flavor of the spice. Used in daal and vegetable dishes.

It is also a popular addition to Mauritian dishes achard, vindaye and masala pastes.
